Intuit Practice Management provides work type defaults for tracking and visualizing through groups of work. 

A Default Work Type is used when no work type has been defined for a work item. It is also used when notes and emails are assigned to a colleague. 

You can choose what work statuses and what tasks are made available for you Default Work Type. To do this navigate to your Main Menu > Settings > Select the Workflows Tab > Edit Default Work Type

You can select from the checkboxes what statuses you'd prefer in your Default Work Type for work, tasks and also emails and notes that have been assigned to a colleague.
